For the sauce:
melt margarine in a frying pan
add chopped onions, garlic, and crumbled tofu
peas (frozen or fresh), spinach
plain soymilk (be careful not to add too much)
parsley or whatever herb you want
cook everything together in frying pan, allow soymilk to reduce. Serve over pasta (preferably whole wheat). I used chow mein noodles in the picture.
